Home food cooking in India after R2I

Please address me as Maharaja Jeloka. Organic this and sautéed that, whole grain something with Spanish something, and a drink that’s got New Orleans and Assam!

Our R2I home meals are indeed more lavish than in Boston.

The good

Meenal calls ahead so the cook can have most things prepared. The first time, she shows him how its done. Every time after that, dinner takes 15 Meenal minutes! I make the cocktails.

The bad

After R2I, you’ll need to learn to cook with local ingredients. There are fewer varieties of everything compared to America and the produce is of lower quality. But it can clearly be overcome – a few months of trial and error and Meenal is making this Yuppie weep with happiness!

Prep time

45 Meenal minutes on 1st try, 15 Meenal minutes after that!

1. Salad

Organic lettuce, organic knol khol (ganth gobi), tofu, onions and green peppers tossed in olive oil and balsamic vinegar.

2. Tomato Gazpacho soup

Cold soup with tomato, cucumber, green pepper, onion, garlic, olive oil, red wine, salt and pepper to taste.

3. Frittata (Spanish omelet)

Crispy on the outside with sautéed potatoes, eggs, red pepper, spinach, garlic and milk. Salt and pepper to taste.

4. Multi grain bread

Fresh loaf sliced and warmed/toasted as needed.

5. Southern Comfort Sweetened Tea Cocktail

Equal parts Southern Comfort and freshly brewed Assam tea, some cola, sugar syrup and lemon. Shake with ice and strain.
